Bison Meatloaf

Prep time: 20 minutes
Bake time: 1 hour 10 minutes
Oven temp: 350ºF
Stand: 10 minutes
Makes: 8 servings

Meat Loaf Ingredients:
1 1/2 pounds ground bison meat
2 beaten eggs
3/4 milk
2/3 cup fine gluten free bread crumbs (I use brown rice bread crumbs)
1/4 cup finely chopped onion
2 tablespoons snipped fresh parsley (or freeze dried parsley)
1 teaspoon sea salt
1/2 teaspoon dried crushed sage, basil, or oregano (I make mine with a blend)
1/8 teaspoon black pepper

Sauce Ingredients:
1/4 cup ketchup
1/4 cup chilli sauce
2 tablespoons brown sugar
1 teaspoon liquid smoke
1 teaspoon dry mustard

In a bowl combine eggs and milk; stir in bread crumbs, onion, parsley, salt, spice blend (sage/basil/oregano), and 1/8 teaspoon black pepper.  Add meat; mix well.  Lightly pat mixture into a greased 8 x 4 x 2-in loaf pan.

Bison Meatloaf is ready to go and in the oven.

Bake in a 350ºF oven for 1 hour, or until internal temperature reaches 160ºF.  Spoon off any fat that’s collected on top.

In a bowl, combine ketchup, chilli sauce, brown sugar, liquid smoke, and mustard; spread over meat.

After topping the meatloaf with sauce, it just needs to go back in a little bit longer.

Bake for 10 more minutes, then let stand for 10 minutes before serving.
